The Old Fashioned dates to the 1800s as the 'whiskey cocktail', back before drinks had proper names. We move it to the Caribbean with dark rum and toasted cacao, adding a mole bitter that nods to Mexico. Our answer for anyone who wants a drink to sit with, not knock back.
