The Daiquiri was born in Cuba around 1898, when an American engineer invented it to cool the iron miners at the Daiquiri works. Hemingway loved it frozen, but the shaken version is a bar's real test: get the balance wrong and you'll taste it straight away. Ours is dry, cold and direct.
