Caipirinha

Cachaça, lime, brown sugar, crushed ice.

Brazil in three ingredients. Raw, grassy, refreshing to a fault.

Profile: fresh, fruity and classic. An aperitivo pour, when you want something lively.

The Caipirinha uses cachaça, an unaged sugarcane spirit, rougher and grassier than regular rum. It's been Brazil's national drink since 2003, though the favelas had been drinking it for decades as folk medicine for colds. The lime gets muddled with sugar, not juiced: that's where the oleo-saccharum comes from.
