Calamansi, or calamondin, is a kumquat-mandarin hybrid found all over Southeast Asia, from the Philippines to Vietnam. Sharper and more aromatic than lime, it gives the Mojito a citrus dimension the Cuban classic doesn't have. Proof that even the great classics gain something by travelling.
